Food Truck or Buffet? Picking the Right Format for Your Event

Both feed a crowd well; they feed it differently. The truck is theater, the buffet is throughput. Here is the honest comparison, from a kitchen that runs both.

What the truck really is

Paisan’s mobile kitchen grills live-fire on site: the food is cooked in front of the people eating it, and the smell does the marketing. It needs a level place to park, room for a line to form, and an event where watching the grill is part of the fun. What the buffet really is

The hot buffet arrives finished and holds at temperature: 31 entrees on the board from $17.99 per person, three sides, serviceware, and a line that can feed a big room fast. It works indoors, in winter, in venues with rules about open flame, and anywhere the schedule matters more than the show.

Buffets price per person off the published board, so budgets are arithmetic. Truck events are quoted per event, because a live grill for forty people at a house differs from a festival line of four hundred.
