Appetizer Party Math: How Many Pieces Per Person?

Appetizer orders are pure arithmetic wearing a party dress. The board runs 46 items from $1.50 to $6 per piece with a 20-piece minimum per selection; the only real question is how many pieces your crowd will eat. Here are the numbers the kitchen plans by.

Pieces per person, by the hour

A cocktail-hour bridge before dinner wants four to six pieces per guest. An appetizers-as-the-meal evening wants ten to fourteen, weighted toward the substantial end of the board. An open house where people drift through wants six to eight, spread across a long table that photographs well at hour one and hour four.

Worked example: 50 guests, apps-and-drinks party

Build the spread in three bands

Anchor with volume from the $1.50–$2.50 band (bruschetta, caprese skewers, pinwheels, deviled eggs). Add texture from the middle (spanakopita, sliders, spring rolls around $2.50–$3). Crown it with a few premium picks so the table has headlines. The full board lists every item and price.

The minimum, explained

Twenty pieces per selection is the floor, and it’s a feature: it forces variety math toward fewer, deeper selections instead of two sad pieces of everything. For thirty guests, four selections beats eight, and the table looks generous instead of scattered.
