Paisan's doesn't have a separate tasting room or scheduled tastings. Come into the deli any time it's open, Monday through Friday, 7:30 to 3:30, at 6550 Longley Lane. The tri-tip on the wedding board is the same tri-tip regulars line up for at lunch, reviewed hundreds of times in public.
Come hungry, order the Sammy's or the meatball, and taste exactly what the carving station serves. Then bring your questions to the menu conversation with Mike: the board, the sides system, and anything you want tried before the guarantee locks.
