The construction is the trick: the sourdough roll gets hollowed and the meatballs are sealed inside, so the sandwich holds together to the last bite. The recipe has a paper trail, in Mike's own words: “My uncle from San Francisco made it that way at his restaurant and showed me over 30 years ago. The sauce is my dad's… he is Greek and my mother was the Italian. So I am a proud Greco Roman.”
Any deli sandwich can be built on gluten-free bread; the deli keeps a choice of gluten-free options on hand.
